Stainless Steel Equipment is Optimal for Breweries
Brewing Equipment
In 2022, an estimated 9,709 breweries were operating in the United States – a number which has been increasing steadily since 2012. Interestingly, the amount of beer being produced has been declining year over year. The height of beer production was in 1990, when approximately 200 million barrels of beer were produced, but in 2022, that number had dropped to 181 million barrels. (Source: Statista) The apparent discrepancy between more breweries and less beer is explained by the rise of smaller breweries creating craft beers.
Many of these breweries began in beer lovers’ homes, when they decided to experiment with creating their own craft beer varieties. However, once the operation graduates to a production facility, the need for more advanced, efficient, and scalable equipment arises. When selecting brewing equipment, stainless steel is an excellent choice due to its corrosion resistance, durability, low reactivity, and ease of maintenance. Stainless steel also represents a relatively low-cost option compared to copper or aluminum, especially when refurbished and reconditioned stainless steel equipment is available.
Stainless Steel in the Brewing Process
The process of brewing beer involves both high temperatures and a high-pressure environment. Stainless steel is an intelligent choice for many reasons, including:
when maintained properly, stainless steel equipment can withstand being raised to high temperatures over and over – without deforming or corroding.
stainless steel’s corrosion resistance is far greater than that of regular steel, iron, or aluminum; notable because of the acidity and temperatures involved in the brewing process.
stainless steel is less vulnerable to oxidation damage, protecting the integrity of expensive brewing equipment.
stainless steel does not react with acidic substances or influence flavors, allowing for a consistent, unaltered final product.
These qualities also make stainless steel equipment desirable for other types of food and beverage production facilities.
Maintenance of Stainless Steel Brewery Equipment: Stainless steel surfaces are nonporous, meaning that ordinary cleaners (and a bit of effort) can easily maintain clean and sterile equipment. The passivation layer provides a smooth surface that facilitates easy sanitization via chemicals or steam – saving time and expense while ensuring proper sanitation procedures.
Available Grades of Stainless Steel for Breweries
As with most applications of stainless steel, the grade you choose can significantly impact performance and results. There are many grades of stainless steel that are appropriate for the brewing process, but the most common are 304 and 316. Grade 304: 304 stainless steel is typically used in brewing due to its durability and superior resistance to corrosion. Grade 304 stainless steel can also be cleaned and sanitized easily. Mash tuns, kettles, fermenters, piping systems, bright tanks and valves are often made of Grade 304, as are components frequently exposed to high temperatures or harsh chemicals.
Grade 316: 316 stainless steel is appropriate for applications requiring additional corrosion resistance. Nickel and molybdenum are present in higher concentrations in 316 stainless steel, making it a stronger material overall. Because of its tolerance to more intense thermal conditions, this material is often utilized to prduce heat exchangers and is an excellent choice for brewing, although it is more expensive than Grade 304 steel.
